Seeing as I myself am not yet at the liberty to stock my own kitchen (I currently live with my parents) some of the options in the kitchen are a bit limited. However, there are a few staples that I always make sure I have on hand when I'm in a pinch:
Leafy greens. When in doubt of what to eat, I always gravitate towards a hugeeee salad.
Nuts and seeds. These make for a great snack or an elevation to any salad or stir fry dish. I like to make overnight chia seed pudding for my breakfasts!
Rolled or steel cut oats. I use oats to make a quick breakfast when I don't feel like cooking or dirtying dishes.
Eggs. Scrambled or fried eggs are a staple for breakfast for me, but sometimes I hard boil them ahead of time to turn them into a grab-and-go snack option!
Fruit (mainly apples, bananas, and blueberries). I like to grab a piece of fruit on my way out the door to ensure I'm getting enough fiber and fruit-derived phytochemicals throughout the day, plus my favorite food is fruit!
Nut butters, like peanut butter and almond butter. I like to pair these with my oatmeal or with a piece of fruit as a snack!
Carrots and broccoli. I like to pair these vegetables with some hummus for a quick and filling snack.
Hummus. Hence, number 4. But I also like to put hummus on sandwiches or eat it with crackers--makes for a great healthy fat addition to any meal or snack!
Cooking oils such as avocado oil and olive oil. I use these for many things, whether that is for cooking or to make my own salad vinaigrette.
Whey protein powder. Though not essential, I like to keep a brand of whey protein powder in my cabinet in case I ever find myself in a situation when I'm low on protein. It is entirely possible to meet protein needs or goals using real whole food (and in fact, it's recommended this way), but sometimes that is not always possible. I use protein powder to close any gaps in my nutrition.
